Name: Southern Potato Salad

Ingredients: 3 lbs white potatoes, peeled n cubed; 1 celery stalk, chopped; 1 white onion, chopped; 3 hard boiled eggs, chopped; 1 tsp agave nectar; 1 medium dill pickle, finely chopped, about 1/3 cup; 1-2 tsp yellow mustard; 1/2 cup light mayonnaise (add 1-2 tbsp more if needed); 1/4 cup chopped fresh parsley; 1 tsp kosher salt; 1 tsp ground black pepper; Pinch sweet paprika, for garnish (optional)
